Carrot and Coriander Soup

Ingredients:

  • 1 kg carrots
  • 1 tbsp butter
  • 4 tbsp coriander
  • 1 litre stock

Directions:

  1. Sweat onion, add 3/4 of the carrots chopped. Add stock, cook until soft. Blend until smooth. Grate remaining carrots and add chopped coriander. Bring soup to the boil, season and serve.
