Carrot and Coriander Soup

Ingredients:

Directions:

  1. Prepare your vegetables.
  2. Heat the oil in the pan on a medium heat, adding onions when hot.
  3. Stir them around a bit, but let them cook and become coloured. Then add the carrots and turn the heat to low and leave to 'sweat out' their juices for about 5-10 mins, stirring occasionally.
  4. Prepare your stock (I like to add extra water so it boils down and gets thick)
  5. Add stock to the pan and turn the heat up high so that it starts to boil. Feel free to add more water if you want. Then leave it to simmer for about 10-15 mins, stirring occasionally. Let it reduce down until its is nice and thick.
  6. I tend to blend mine now as I like thick soup - but that's all down to taste. Anyway, chop up your coriander leaves (about a handful) and add to the soup (after blending - if you are)
  7. Serve with a little ground black pepper.
  8. Yum.
