  1. Heat oil in a pan, add onions and garlic and fry for 3-4 minutes or till
  2. Softened. add carrots and continue to fry for another 4 minutes or until softened. add stock bring to boil and then reduce heat and simmer for 8-10 minutes, or until carrots are tender. stir in cilantro
  3. Salt and pepper. cool slightly. transfer mixture to a blender or a food processor and blend till smooth. pour or ladle soup into soup dishes, sprinkle some chopped cliantro,crusy bread and enjoy
