Ingredients:

Directions:

  1. Cut up lobsters and place in pot.
  2. Cover with 2 cups of water and bring to a boil.
  3. Reduce heat and simmer 10 minutes or until loster shell is red and meat is cooked,.
  4. Remove lobster from water but leave water in pot to cool.
  5. Remove lobster meat from shells and dice. Rese
  6. Rve Tomally and any roe separetely. and set aside
  7. Break shells in small pieces and return to pot. of lobster water
  8. Add fish or chicken stock and boil gently for 20 minutes.
  9. Reduce stock to 2 cups.
  10. Strain into measure cup and add 2 more cups of stock or water if needed to equal 2 cups.
  11. Melt butter in a separate pot and add shallots.
  12. Cook two minutes to soften shallots.
  13. Whisk in flour.gradually add small amont of stock whisking briskly to keep smooth.
  14. Whisk in tomally and roe.
  15. Scald milk and stir into mixture.
  16. Add lobster meat and simmer for 3 minutes.
  17. Do not boil.
  18. Ladle into bowls.
  19. Stir into each bowl, a few Tbs of cream a few Tbs of sherry
  20. Sprinkle with fresh parsley
