Caribbean Chicken Salad With Peanuts

Directions:

  1. In blender combine peanuts, mayonnaise, chutney, sugar, vinegar and curry.
  2. Blend until smooth then set aside.
  3. Toss lettuce with green onions and divide among serving plates.
  4. Top with chicken, papaya slices and raspberries then sprinkle with peanuts.
  5. Serve with dressing.
