Captain D's Batter-Dipped Fish

Ingredients:

  • 2 lbs pollock fillets or 2 lbs cod fish fillets
  • 1 1/2 cups flour
  • 1 (1/4 oz) package dry yeast
  • 1 egg
  • 1 cup beer
  • 1/2 cup hot water
  • 1/2 tsp salt

Directions:

  1. In a bowl mix the yeast and beer.
  2. In another bowl beat together the egg, hot water and salt. (and peppers if used).
  3. Add the egg mixture to the beer.
  4. Slowly beat in the flour until batter is consistency of light pancake batter.
  5. Roll or dust fish with flour (I've seen some pat the fish after applying flour, similar to the motion of making a burger patty).
  6. Drop fish into batter and cover thoroughly.
  7. Fry in hot oil.
  8. Drain on baking rack or broiling pan.
