Ingredients:

  • 1 kl. orange camote (sweet potato) peeled
  • 1 cup brown sugar , plus addtional for sprinkling
  • 1/2 cup water
  • 2 tbsp butter

Directions:

  1. Soak peeled sweet potato in a bowl of water for about 15 minutes to prevent discoloration. Cut each sweet potato into wedges. Preheat oven to 350 F.
  2. Put sweet potato wedges in a large casserole and pour in enough water to Cover. Bring to boil then lower heat to simmer. Let simmer until sweet potato wedges are tender but still firm, about 15 to 20 minutes. Check for doneness.
  3. Arrange cooked wedges in an oven-proof dish. In a saucepan, combine sugar and the 1/2 cup water and bring to a boil to make a syrup. Add butter and stir.
  4. Pour syrup over wedges. You may sprinkle additiional sugar over the wedges, if desired. Bake in preheated oven for 20 minutes.
