Ingredients:

  • 1 1/2 cups hot cooked rice
  • 1/2 package of dry yeast
  • 1/2 cup warm water
  • 1 1/4 cup sugar
  • 1/2 teaspoom salt
  • 1/4 tsp nutmeg

Directions:

  1. Mash rice and cool to lukewarm.
  2. Dissolve yeast in warm water and stir into rice. Cover and let rice overnight in a war place, free from drafts.
  3. Add eggs, flour, sugar , salt and nutmeg to rice mixture, beating until smooth.
  4. Cover and let stand in a warm place for 30 minutes.
  5. Heat 3 inches of oil to 360 degress and drop by rounded tablespoonfuls into hot oil.
  6. Fry about 3 minutes until golden brown, drain, sprinkle with sugar and serve immediately.
  7. Makes about 2-1/2 dozen
