These hot rice cakes are almost like a donut hole. Great with coffee, tea or as a snack.
Ingredients:
1 1/2 cups hot cooked rice
1/2 package of dry yeast
1/2 cup warm water
3 eggs, beaten
1 1/4 cup sugar
1/2 teaspoom salt
1/4 teaspoon nutmeg
oil for frying
sifted powedered sugar
Directions:
1. mash rice and cool to lukewarm.
2. Dissolve yeast in warm water and stir into rice. Cover and let rice overnight in a war place, free from drafts.
3. Add eggs, flour, sugar , salt and nutmeg to rice mixture, beating until smooth.
4. Cover and let stand in a warm place for 30 minutes.
5. Heat 3 inches of oil to 360 degress and drop by rounded tablespoonfuls into hot oil.
6. Fry about 3 minutes until golden brown, drain, sprinkle with sugar and serve immediately.
7. Makes about 2-1/2 dozen
