Ingredients:

  • 1 1/2 cup. sugar
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs
  • 1 (20 oz..) can crushed pineapple with juice
  • 3/4 cup. sugar
  • 3/4 cup. evaporated milk
  • 2 sticks of butter
  • 1 1/2 cup. coconut

Directions:

  1. Preheat oven to 350 degrees. Grease and flour 9x13 pan.
  2. In large bowl,sift together flour,1 1/2 c. sugar,salt and baking soda. Add eggs, pineapple and juice. Mix on low until well blended.
  3. Pour batter into pan and bake for about 30 mins or until toothpick comes out clean. Have topping ready when cake is done.
  4. To make topping: In a saucepan,combine 3/4 c. sugar,milk and butter.Bring to a boil and cook 2 mins. Stir constantly. Add coconut,pecans and combine. Remove from heat.
  5. When you remove the cake out of the oven, pour mixture and spread evenly while cake is still hot.
