Buttermilk Chocolate Cupcakes

Ingredients:

  1. In a large mixing bowl, cream butter and sugar until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Beat in vanilla.
  4. Combine the flour, cocoa, baking soda and salt.
  5. Add dry ingredients to creamed mixture alternately with buttermilk mixture, beating well after each addition.
  6. Fill paper-lined muffin cups two-thirds full.
  7. Bake at 375° for 15-20 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  8. For frosting, in a small mixing bowl, beat butter and confectioners' sugar until smooth.
  9. Beat in the melted chocolate, milk, vanilla and salt.
  10. Frost cupcakes; garnish with chocolate sprinkles.
  11. Yield: 2 dozen.
