Buttered Toasted Pecan Pie

Ingredients:

  • 1/2 stick unsalted butter
  • 3/4 cup heavy cream
  • 1 cup firmly packed light brown sugar
  • 1/4 tsp salt
  • 3 eggs
  • 1-1/2 cups toasted* pecan halves
  • toast pecans in 375 degree oven for 5-10 minutes, stirring 3 times while baking

Directions:

  1. In medium saucepan, heat butter over low heat until it turns golden-amber (do not burn)
  2. Immediately pour cream into butter to stop cooking
  3. Pour into mixing bowl
  4. Blend in brown sugar, salt, corn syrup and vanilla
  5. Beat in eggs *by hand* until well blended (I use whisk)
  6. Stir in pecans
  7. Pour into pastry lined 9 inch pie plate (crimp edges of pastry as high as possible)
  8. Cover edges with strips of aluminum foil
  9. Bake 30 minutes at 375 degrees
  10. Remove foil strips and continue baking until filling is set and pastry is golden (about 15 minutes
  11. Cool at least 2 hours before slicing
  12. Delicious, and a little different from a regular pecan pie
