  1. Cream butter and powdered sugar in a large bowl until light and fluffy. Beat in peppermint extract. Gradually add flour and blend well.
  2. Roll dough into tablespoon size balls and dip one side of rolled dough into colored decorating sugar. Place 1 inch apart on ungreased baking sheets, with sugared side up. Gently press each ball with a glass to flatten...a glass with an etched, decorative bottom make a pretty design. I use a beer mug that has a starburst design at the bottom. Bake at 350 degrees for 12-15 minutes or until firm...do not allow cookies to brown. Cool cookies on wire racks. These can be made in mini size and given as a little gift in a coffee mug or tea cup.
