Brown Sugar Caramel Apple Cake

Ingredients:

  • 1/2 cup oil
  • 1/4 cup applesauce
  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 2 cups flour
  • 5 tbsp butter
  • 3/4 cup brown sugar , packed
  • 1/2 tsp vanilla

Directions:

  1. Whisk oil, applesauce and sugars together until smooth. whisk in eggs.
  2. Add apples and vanilla, stir to combine.
  3. Sift dry ingredients and stir until moist- it will be VERY thick, add walnuts.
  4. Spread into a greased 13x9 in pan.
  5. Bake at 350 for 35-40 minutes.
  6. Heat butter, sugar and cream until boiling, simmer whisking 4-5 minutes.
  7. Stir in vanilla and pour over hot cake.
  8. Serve warm with vanilla ice cream.
