Brown Sugar Caramel Apple Cake

uses tons of fresh apples, a taste of fall
Ingredients:
4 cups apples, peeled and chopped small
1/2 cup oil
1/4 cup applesauce
2 eggs
1 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1 1/2 teaspoons baking soda
2 cups flour (i use whole wheat pastry flour)
1/2 cup walnuts, chopped
5 tablespoons butter
3/4 cup brown sugar, packed
1/4 cup whipping cream
1/2 teaspoon vanilla
Directions:
1. whisk oil, applesauce and sugars together until smooth. whisk in eggs.
2. add apples and vanilla, stir to combine.
3. sift dry ingredients and stir until moist- it will be VERY thick, add walnuts.
4. spread into a greased 13x9 in pan.
5. bake at 350 for 35-40 minutes.
6. heat butter, sugar and cream until boiling, simmer whisking 4-5 minutes.
7. stir in vanilla and pour over hot cake.
8. serve warm with vanilla ice cream.
