Brown Rice Pudding With Maple Syrup

Ingredients:

  • 1/2 cup maple syrup
  • 1 3/4 cups milk (i use skim though 1% is probably better)
  • 1 egg
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Directions:

  1. Mix together all ingredients but rice in a medium pot.
  2. Add the cooked rice and cook for 10 minutes over low to medium heat.
  3. Serve with a little cinnamon or sweetener, if desired.
