Ingredients:

  • 160 g onion, chopped (medium size)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1 3/4 cup chicken broth (14 oz can)
  • 1/4 cup water

Directions:

  1. Cook onion in olive oil over low heat.
  2. Add rice, salt, broth and water.
  3. Bring to a boil.
  4. Cover, turn the heat down to simmer for 35 minutes (until rice is tender and liquid is absorbed).
  5. Remove from heat.
