Ingredients:

Directions:

  1. Beat together shortening and just 1/2 cup of the sugar on medium speed until creamy and smooth.
  2. Add egg and beat until belnded.
  3. Mix together flour, baking powder, and salt.
  4. Add to the shortening mixture, alternating with the crushed pineapple& its juices, beginning and ending with the flour mixture.
  5. Beat on low speed just until blended after each addition.
  6. Spoon into greased muffin tins, filling 2/3s full.
  7. Bake in a preheated oven at 350 F for 25 minutes, or until golden.
  8. Remove from tins immediately and brush with melted butter.
  9. Stir together remaining sugar and cinnamon and sprinkle over the tops o each puff.
  10. Serve hot.
