Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups all-bran cereal
  • 1/3 cup sesame seeds
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1/2 tsp baking soda
  • 1 pinch salt
  • 1 egg
  • 3/4 cup buttermilk
  • 1/2 cup packed brown sugar
  • 1/3 cup vegetable oil
  • 2 tbsp molasses
  • 1 1/2 cups finely grated carrots
  • 1/2 cup chopped dates

Directions:

  1. MIX flour, cereal, sesame seeds, baking powder, cinnamon, allspice, baking soda and salt in large bowl.
  2. WHISK together egg, buttermilk, brown sugar, vegetable oil and molasses.
  3. STIR liquid mixture into dry ingredients, stirring just until moistened.
  4. Fold in carrots and dates.
  5. Spread evenly in greased 13 x 9 inch baking pan.
  6. Bake at 350°F for 25 to 30 minutes or until centre springs back when gently touched.
  7. Cool on rack.
  8. Cut into bars.
  9. Store in airtight container.
