Bok Choy With Tomato and Cheese

Ingredients:

  • 1 baby bok choy , sliced in half longways and well cleaned
  • 3 slices tomatoes
  • 1/4 cup parmesan cheese, grated (use another cheese if you want to do so)
  • 1/2 tsp thyme
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Directions:

  1. Place the baby bok choy cut side down in a ceramic oven safe skillet (if no non stick ceramic, just put oil in your skillet first - it must be oven safe) over a medium high heat.
  2. Sprinkle spices on top.
  3. Then top with tomatoes then cheese.
  4. Turn on broiler.
  5. Cook for a few minutes.
  6. Move pan to broiler and leave until the cheese is well melted and just started to brown.
  7. If this is your meal, eat 1 bok choy worth. If it is a side, serve 1 cut half per person.
