Ingredients:

  • 1 cup flour
  • 1 tbsp sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 cup buttermilk (use 3/4 cup for thicker cakes.)
  • 1/4 cup blueberries .

Directions:

  1. Mix the dry ingredients together.
  2. Mix the egg and buttermilk together in a separate bowl.
  3. Heat the pan with a thin coat of oil or butter.
  4. Once the pan is hot, mix the wet/dry ingredients together just until combined. Add the blueberries last.
  5. I usually then make 2 big pancakes out of the batter.
