Ingredients:

  • 2 tbsp butter
  • 1/4 cup boiling water
  • 2/3 cup orange juice
  • 4 tbsp orange rind
  • 1 egg
  • 1 cup sugar
  • 2 cup flour
  • 1 teasp. baking powder
  • 1/4 teasp baking soda
  • 1/2 teasp salt
  • 2 tbsp honey

Directions:

  1. Melt butter in boiling water then add 1/2 cup orange juice and 3 Tbsp orange rind
  2. Beat egg and sugar until fluffy in large bowl
  3. Mix dry ingredients together
  4. Add dry ingredients to egg mixture. mix until moist
  5. Add orange mixture and then fold in blueberries
  6. Bake at 325' approx 1 hour in a greased loaf pan
  7. Mix 2 Tbsp orange juice, 1 Tbsp orange rind and 2 Tbsp honey together.. pour over the top of the warm bread.
