Ingredients:

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/4 cup butter
  • 3/4 cup brown sugar
  • 1 cup buttermilk
  • 1 cup oatmeal

Directions:

  1. Preheat oven to 400 F and prepare muffin cups.
  2. Mix first 4 ingredients together in a large bowl, fold in blueberries.
  3. In a medium bowl combine buttermilk and oatmeal and allow mixture to soak for 10 minutes.
  4. Beat egg lighty in a medium bowl.
  5. Melt butter and add butter and brown sugar to the egg.
  6. Combine egg mixture with oatmeal and stir to blend.
  7. Add moist mixture to dry mixture all at once and stir lightly.
  8. Fill 12 prepared muffin cups 3/4 full.
  9. Bake for 20 minute.
