Blueberry Coffee Cake

Ingredients:

  • 1/4 cup butter
  • 3/4 cup white sugar
  • 1 egg
  • 1/2 cup milk
  • 1/2 tsp salt
  • 2 cups blueberries
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 3 tbsp butter

Directions:

  1. Preheat oven 375° and grease and flour a 9-inch springform pan.
  2. Sift together flour, baking powder and salt; set aside for now.
  3. In large bowl, cream butter and sugar until light and fluffy. Beat in egg.
  4. Beat in flour mixture alternately with milk, mixing just until combined.
  5. Stir in blueberries and pour mixture into pan.
  6. In small bowl, combine brown sugar, 3 tablespoons flour, cinnamon and the pecans.
  7. Cut in butter until crumbly.
  8. Sprinkle over batter.
  9. Bake 40 to 45 minutes, or until a toothpick inserted in center comes out clean.
  10. Allow to cool a bit before serving.
