Ingredients:

  • 5 quarts blackberries
  • 1 1/4 cups water

Directions:

  1. Combine berries and water.
  2. Bring slowly to a boil.
  3. Cook until berries are soft.
  4. Strain overnight in a jelly strainer, lined with cheesecloth that has been wrung out in hot water.
  5. Measure juice.
  6. Boil juice 8-12 minutes.
  7. Skim.
  8. Remove from heat.
  9. Add sugar: 3/4 cup sugar per 1 cup of juice.
  10. Stir until dissolved.
  11. Return to heat and boil until 220F.
  12. On a thermometer.
  13. This should take 3-10 minutes.
  14. Pour into sterilized jars and seal.
