Ingredients:

  • 3 cups precooked black beans, undrained,but more beans than liquid
  • 1 tbsp finely chopped onion
  • 1/2 tsp lemon juice
  • 1/4 cup sour cream
  • 1 1/2 tsp finely chopped fresh parsley
  • 1 1/2 tsp finely chopped red radishes
  • tortilla chips (optional)

Directions:

  1. Sautee onion in oil.
  2. Add beans and lemon juice.
  3. Separatelty, mix sour cream with parsely and radish.
  4. Serve beans hot and place a dollop of the prepared cream on top of them.
  5. May be served with tortilla chips.
