Ingredients:

Directions:

  1. Brown meat, drain if needed.
  2. Add onion, cumin, chili powder and garlic to meat and cook onions until translucent.
  3. Add cans of black beans, with liquid, and rotel.
  4. Add corn and simmer until liquid has thickened but not evaporated.
  5. Preheat oven to 350 degrees
  6. While simmering cut corn tortillas in 2 1/2” - 3 circles. Squares would also be cute.
  7. Once mixture is cooked, heat the circles, or squares of corn tortillas in the microwave, or skillet, for 8-10 seconds (adjust your time if needed) just to heat and make pliable.
  8. Fit in hole of muffin tin and add mixture.
  9. Cook in a preheated 350 degree oven for 6-12 minutes until little cups have set and starting to brown.
  10. As Always, My oven cooks different than yours so adjust time if needed.
  11. Take out and plate. Garnish with shredded cheeses and lettuce, sour cream, green chilies, …whatever you top your taco with.
