Ingredients:

  • 4 -5 large potatoes
  • 2 tbsp oil
  • salt and pepper

Directions:

  1. Rub the outside of the potatoes with oil and then lightly salt. Prick the potatoes with a fork. Bake at 325 degrees for about an hour or until they start to become soft. Let the potatoes cool completely.
  2. Grate potatoes.
  3. Heat oil in skillet on medium. Add potatoes.
  4. Cook 15-20 minutes. Salt and pepper to taste.
  5. You can also add any additional items that you like, such as, onion, tomotoes, cheese, etc.
