Directions:

  1. Cook beets till fork tender and drain
  2. Cool, peel, and coarse chop as for potato salad
  3. Combine with chopped hard boiled eggs, mayo to bind, some dill weed to taste and salt and fresh grated pepper to taste.
  4. Serve immediately at room temperature or chill well and serve
