Ingredients:

  • 1 1/4 oz whey protein
  • 1/4 cup wheat bran
  • 1 1/4 cup rolled oats or 2 packets (100g) flavored instant oatmeal
  • 1/4 cup granola
  • 1/4 cup apple juice
  • 1/2 cup brown sugar
  • 1 tbsp honey
  • 1/3 cup peanut butter

Directions:

  1. Preheat oven to 350-degrees
  2. Line a large baking dish with parchment paper or grease with cooking spray
  3. Toss the organic almonds into a food processor until nicely chopped.
  4. In a large bowl, mix protein, wheat bran, whole-wheat flour and two packets of instant oatmeal (I like organic raisin spice and multigrain flax plus, but think of which flavors will blend well)
  5. In a smaller bowl, mix egg, honey, brown sugar and juice- I prefer a mixed berry such as naked juice.
  6. Whisk in peanut butter.
  7. If using regular oatmeal, toss in extra 1/8 cup maple syrup to flavor)
  8. Bars
  9. Add flavored granola to dry mixture.
  10. Add almonds to dry mixture.
  11. Fold wet mixture to dry mixture.
  12. Using a rubber spatula, press mixture onto parchment paper pressing evenly.
  13. Bake in center of oven for about 35 minutes.
  14. Cool.
  15. Cut into bars. save for about one week in airtight container.
  16. Makes 15 bars.
