Beets With Orange Sauce

Ingredients:

  • 5 fresh medium-size beets (about 1 1/4 lbs.)
  • 6 cup water
  • 1 tbsp. vinegar
  • 1 tsp. salt
  • 1 tbsp. cornstarch
  • 1 tbsp. brown sugar
  • 3/4 tsp. salt
  • dash of pepper
  • 2/3 cup orange juice
  • 1/4 cup vinegar

Directions:

  1. Cut off all but 2 inches of beet root tops. Wash beets and leave whole with root ends attached. Place beets in a saucepan with water, vinegar (to preserve color) and salt. Bring to a boil. Reduce heat and simmer until beets are tender, 45 to 50 minutes adding more water if necessary.
  2. Run cold water over beets; slip off skins and remove root ends. Slice, dice or cut into shoestrings.
  3. In a saucepan, mix together cornstarch, brown sugar, grated orange peel, salt and pepper. Gradually stir in orange juice and vinegar. Cook, stirring constantly, until mixture thickens and boils. Boil for 1 minute, stirring. Stir in beets; heat through.
