Beer Puffs Wth Corned Beef Filling

Ingredients:

Directions:

  1. The day before is when you'll need to start these.
  2. In a saucepan, bring beer and butter to a boil.
  3. When butter is melted, add flour and salt.
  4. Cook over low heat, stirring constantly, until the mixture pulls away from the sides of the pan.
  5. Remove from heat.
  6. Preheat oven to 450°.
  7. Beat eggs into beer-flour mixture, one at a time, until dough is shiny.
  8. Drop by teaspoonsful about 1-inch apart on a lightly greased cookie sheet.
  9. Bake 10 minutes.
  10. Reduce oven temperature to 350° and bake an additional 10 minutes.
  11. Remove from oven and let cool.
  12. Split each puff with scissors and refrigerate until the next day.
  13. Filling, also done the day before:
  14. In a bowl, combine corned beef, onion, horseradish, mustard and mayonnaise.
  15. Mix until well blended.
  16. Cover and refrigerate overnight.
  17. When ready, fill puffs with filling, place on platter and serve.
  18. They will go quickly!!!!!
