  1. In a skillet, brown the meat and the onions in 3 tbsp oil. Add the parsley and scallions, salt and pepper. Stir well, and set aside to cool.
  2. Break the eggs into a bowl. Add cinnamon and curry powder. Beat thoroughly with a fork.
  3. Add the meat to beaten eggs. Mix, taste, and adjust seasonings.
  4. Heat the remaining oil in a skillet. Pour in the egg mixture then cook over low heat, covered, for about 15 minutes or until mixture has set. Cook on the second side by cutting into wedges and turning over one by one. Add more oil if needed, cover, and cook another 15 minutes longer or until golden brown.
