  1. If fruit has seeds that need to be removed or if a smooth texture is desired, puree fruit in a blender, the press through a sieve into a saucepan. ( In the case of firm fruit, such as apples, pears and cranberries, pureeing will need to be done after cooking.) Stir in sugar, salt and lemon juice. 2. Simmer about 15 minutes, until thick. If not as thick as desired, dissolve cornstarch in about 1 tablespoon water, then stir mixture into fruit and cook 1 to 2 minutes more. Serve warm. Keep refrigerated for 1 week.
