  1. In a large bowl with electric mixer set to medium, beat butter and sugar for about 30 seconds or until well mixed. Beat in egg and vanilla, Add flour to mixture with salt and baking soda. Beat until smooth. If dough is too wet, add flour. Form 2 large balls and refrigerate for about 1 hour.
