Ingredients:

  1. Heat oil in a heavy saucepan over medium heat. Sauté onion,
  2. Mushrooms and bay leaf 5 minutes, stirring, until onion is
  3. Softened. Stir in barley, water and salt and pepper to taste. Bring to
  4. A boil. Reduce heat to low, cover pan and simmer 30-35 minutes, or
  5. Until liquid is absorbed and barley is tender. Discard bay leaf and
  6. Stir in parsley. Fluff with a fork before serving
