Barb's Curried Turkey Vegetable Soup

Directions:

  1. To start with, you are going to need 6-8 quart pan to make this soup.
  2. Add the spices to the Turkey stock and bring to a simmer in a 4 qt pot.
  3. In a LARGE (6-8 qt) pot, melt the butter and saute the vegetables and apple slices until tender. Stir in the flour until thickened. Add 1 quart of the heated stock to the sauteed vegetables and stir until thickened. Add the rest of the stock and canned tomatoes and parsley, if used. Simmer for 1 hour on low heat.
