Ingredients:

Directions:

  1. Preheat oven to 325 degrees.
  2. Combine flour, baking soda, salt, baking powder, nutmeg and cinnamon in a large bowl. Mix well.
  3. In a seperate bowl, mix sugar, oil, eggs and vanilla until combined.
  4. Add in the bananas to the sugar mixture and beat until slightly chunky.
  5. Add dry mixture into wet mixture in halves, mixing well after each addition.
  6. Spoon 1/4 cup batter into paper-lined muffin cups.
  7. Bake at 325 degrees for 25 minutes or until a toothpick inserted into the middle of the muffins comes out clean.
  8. Makes 26 muffins.
