Ingredients:

Directions:

  1. Preheat oven to 325ºF.
  2. Prepare two 8-cup loaf pans by spraying with nonstick spray.
  3. Whisk together flour, oatmeal, baking soda, salt; set aside.
  4. In mixer bowl and using paddle, cream butter, sugar and vanilla until light and fluffy.
  5. Beat in eggs one at a time; add bananas, beat again until creamy, about 1 minute.
  6. Add dry ingredients mix to creamed mix, alternating with buttermilk.
  7. Stir in pecans.
  8. Bake 45 minutes or until set in middle and bread has pulled away slightly from pans.
  9. Cool before removing from pans.
  10. Makes 16 servings.
