Ingredients:

  • 1 egg
  • 1/3-1/2 bottle lemon-lime soda
  • white rum or brandy for the adult version
  • confectioners' sugar

Directions:

  1. Cover baking sheet with wax paper.
  2. Put egg and 1 cup of prepared pancake mix in a bowl.
  3. Gradually add soda, stirrng with a fork, until blended.
  4. Batter shouldn't be too thin, so add slowly as pancake mixes vary.
  5. In a seperate dish, put 1/2 cup dry pancake mix.
  6. Peel bananas and cut in 1-2 inch slices crosswise.
  7. Adults only...sprinkle with white rum or brandy before dipping into batter.
  8. Dip in batter than roll in 1/2 cup dry pancake mix.
  9. Place on wax paper.
  10. Let stand 5-15 minutes to set , but no longer than that especially if it's hot and humid outside. You can do them immediately too.
  11. In a skillet, pout 2 inches of oil, enough to fry the bananas.
  12. Add coated bananas and fry to golden brown, about 3 minutes, turning to brown both sides.
  13. Remove with a slotted spoon and drain on a paper towel.
  14. Sprinkle with confectioners' sugar and pretend you can hear the rides and the music of the fair!!!!
