Ingredients:

  • 1 3/4 cups flour
  • 1 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 2/3 cup sugar
  • 1/3 cup shortening
  • 2 eggs
  • 2 or 3 bananas

Directions:

  1. Sift flour and measure. Add the baking powder, soda and salt. Set aside. With electric mixer at low speed, gradually add sugar to the shortening and cream until fluffy. Add 1 egg at a time, beating at medium speed until smooth and light then add second egg and do the same. Add nuts and lemon rind and blend. Slice bananas into a medium sized bowl and mash to pulp, measure 1 cup. Add to sugar and shortening. Add flour mixture alternatly with banana mixture about 1/2 of each at a time. Mix at low speed just to blend after each flour mixture has been added. Pour into a greased loaf pan and bake at 350 degrees for 55 minutes or until toothpick inserted in middle comes out clean.
