Ingredients:

  • 1 cup banana, mashed , the riper the better
  • 2 eggs
  • 1 3/4 cups unsifted flour
  • 1 1/2 cups sugar
  • 1/2-1 cup walnuts or 1/2-1 cup pecans, chopped
  • 1/2 cup oil
  • 1/4 cup buttermilk or 1/4 cup nonfat yogurt , plus
  • 1 tbsp buttermilk or 1 tbsp nonfat yogurt
  • 1 tsp vanilla
  • 1/2 tsp salt

Directions:

  1. In a large bowl, combine dry ingredients, including sugar. In another bowl, combine eggs, bananas, oil, buttermilk and vanilla.
  2. Add wet ingredients to dry ingredients, stirring until just combined.
  3. Fold in nuts. Pour into a greased 9 inch x 5 inch pan.
  4. Bake at 350 degrees until top is golden and splits slightly, about 1 hour.
