Ingredients:

Directions:

  1. Preheat oven 350 degrees.
  2. In large bowl, mix pancake mix sugar, baking powder and pecans; set aside. In another bowl, combine egg, blueberries, bananas, milk and melted shortening. Add to dry ingredients; stir lightly. Turn into a no-stick sprayed 9 x 5-inch loaf pan and spread evenly.
  3. Bake for 35 minutes, or until inserted toothpick comes out clean. Cool 10 minutes in pan. Remove from pan and finish cooling.
  4. Serving quantity: Makes 1 loaf.
