Ingredients:

  • 1/4 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed bananas (2 to 3)
  • 1 tsp. vanilla
  • 1/2 tsp. salt

Directions:

  1. Heat oven to 350 degrees.
  2. Grease a jelly roll pan.
  3. Mix shortening, sugar, eggs, bananas, and vanilla thoroughly.
  4. Measure flour and blend the dry ingredients.
  5. Stir dry mixture into banana mixture.
  6. Spread in prepared pan.
  7. Bake 20 to 25 minutes or until golden brown.
