Baked Zucchini Frittata For One Or Two

Ingredients:

Directions:

  1. Grease a 3 cup small casserole.
  2. In skillet, saute zucchini, onion, red pepper and garlic in butter just until tender. (If I have fresh mushrooms, I add these as well.)
  3. Cool slightly.
  4. In bowl, beat together eggs, milk or half and half and seasonings.
  5. A dash of cayenne pepper can be added as well for a little zip .
  6. Fold in zucchini mixture.
  7. Pour into casserole.
  8. Sprinkle with cheeses.
  9. Bake at 400 degrees for 14 to 17 minutes or until top is puffy and light golden brown.
  10. Let stand 5 minutes.
