Baked Sweet Potato Pineapple

Ingredients:

  • 6 medium sweet potatoes
  • 1/4 cup butter
  • 2 eggs
  • 2 tsp finely grated orange peel (optional)
  • 1 (8 1/4 oz) can pineapple chunks, drained
  • orange slice (optional)

Directions:

  1. Cook sweet potatoes in boiling salted water for 30 to 40 minutes or until tender; drain and peel. Beat potatoes and butter until fluffy. Beat in eggs, orange peel, and 3/4 teaspoons salt. Stir in pineapple. Turn in 1 quart casserole. Cover and bake in 325 oven about 45 minutes or until heated through. Garnish with orange slices.
