Baked Sweet Potato Oatmeal

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine oats, baking powder, cinnamon, and dark brown sugar in a large bowl and mix to blend.
  3. Beat egg and egg white in a medium bowl and then add milk, vanilla, sweet potato, and canola oil,
  4. Add milk mixture to oats mixture and stir well.
  5. Spray a 9-inch pie pan with cooking spray.
  6. Pour oats mixture into pie pan and bake in the oven for 35-40 minutes or until toothpick inserted into the center comes out clean. (Or pull out of the oven slightly undercooked, so it retains the texture of a traditional bowl of oatmeal with a slightly crunchy crust.)
