Baked Pear Pecan Pancake Surprise

Ingredients:

  • 3/4 cup pancake mix
  • 1/2 cup water
  • 3 eggs
  • 1/4 cup and 1 tbsp sugar
  • 1 tsp cinnamon
  • 1/2 cup butter
  • 3 cups thinly sliced peeled pears
  • 1/2 cup raisins

Directions:

  1. In bowl combine pancake mix, water, eggs and 1 tablespoon sugar then mix well and set aside.
  2. In small bowl combine 1/4 cup sugar and 1 teaspoon cinnamon and set aside.
  3. Melt butter in a skillet over medium heat and sauté pears until tender.
  4. Place 1 teaspoon of butter and 1 teaspoon of brown sugar in each ramekin then place in oven.
  5. When butter and brown sugar have melted spoon in sautéed pears.
  6. Top with pecans and raisins then pour 3-1/2 tablespoons batter over pears.
  7. Sprinkle sugar cinnamon mix over batter and bake at 450 for 12 minutes.
  8. Top with raspberry syrup and vanilla yogurt.
