Ingredients:

  • 2 tbsp molasses
  • 4 tsp salt
  • a few whole cloves (optional)
  • 4 tbsp brown sugar
  • 1 1/3 cup tomato paste

Directions:

  1. Cover beans generously with water and soak overnight.
  2. Drain beans, put in kettle and boil for 30 minutes or until the beans are tender.
  3. Add the sugar, molasses, tomato paste, and salt.
  4. Mix.
  5. Cut the onions into quarters; place in an oiled pan or casserole dish.
  6. Add the beans and bake in a slow oven (300 degrees F or 150 degree C) for three of four hours.
  7. The time of baking can be decreased by cooking at a higher temperature.
  8. Slower cooking brings out more flavor.
  9. Check beans occasionally, adding more water if they become too dry.
