Bacon Egg And Rice

Ingredients:

  • 2 cups rice
  • 4 cups water
  • 1 lb bacon
  • 8 eggs

Directions:

  1. Bring water to a boil on high heat.
  2. Add rice, cook for 1 minute, stirring the whole time.
  3. Remove from heat. And cover.
  4. You can do this the night before and put into fridge or do it in the morning and keep covered on the counter so rice absorbs the water.
  5. Slice bacon into small strips and fry. When done remove bacon from grease.
  6. Keep about 1 to 2 tablespoons of grease and put back into frying pan, discard the rest.
  7. Beat eggs slightly and add to bacon grease in pan.
  8. Cook until they just start to set and add rice and bacon.
  9. Stir well to mix.
  10. Add soy sauce until you get a nice light brown color, you will use 2 to 4 tablespoons of soy sauce.
  11. Cover and cook until it looks dry, about 20 minutes.
  12. You can taste it to see if it needs more soy sauce.
